Potato pancakes with fresh cucumber and radish salad

These golden potato pancakes get a nice crispy crust in the oven and are great with a fresh cucumber and radish salad. If you want to vary it up, try them with different toppings – like mashed avocado or black beans, which are great for the little hungry ones around you!

Potatoes: Rich in amino acids that help suppress viruses, potatoes are a valuable source of natural sugars that nourish the liver and keep it in optimal condition. Cucumbers: An excellent source of life-giving water, cucumbers help hydrate the liver and also contribute to reducing accumulated toxins and fats in the blood. Their natural compounds soothe the digestive system and aid in detoxification processes.

Ingredients:

  • 2 large potatoes, peeled and grated;
  • 1 tbsp arrowroot starch;
  • 1/2 tsp sea salt , divided into two parts;
  • 1 cucumber, cut into thin slices;
  • 6 radishes, thinly sliced;
  • 2 tsp raw honey;
  • 1 tbsp freshly squeezed lemon juice;
  • 1 tbsp finely chopped dill;
  • 1/4 tsp finely chopped onion;
  • 1/4 tsp cayenne pepper (optional).

Method of preparation:

Preheat the oven to 220°C. In a bowl, combine the grated potatoes with the arrowroot starch and half of the sea salt . Mix well.

Line two baking trays with baking paper. Using a spoon, form small pancakes about 7–8 cm in diameter and 0.5 cm thick. Place them on the trays and press down lightly.

Bake for about 20 minutes, then carefully flip the pancakes by lifting the edges of the baking paper. If any of them stick, loosen them with a knife or spatula. Return to the oven for another 5 minutes, until golden and crispy.

While the pancakes are baking, prepare the topping: in a bowl, combine the cucumbers, radishes, honey, lemon juice, dill, onion, remaining salt, and cayenne pepper . Mix thoroughly.

Serve the warm potato pancakes, garnished with the fresh salad.
